Hi all,
I spent a whole day searching for a solution to the above. It was truly infuriating and i wanted to put it all in one place for future LG v20 owners:

If you have a lg v20 with security update as of september 2016 you can proceed to root, otherwise, you need to downgrade your phone. Download the LG up 1.14 and also the firmware dated 2016-10-18

install the windows drivers

Take your smartphone and turn it off – press and hold the Power button for a few moments or press the Power key once and select “power off”.

Plug in your phone’s USB cable on your PC, but not on your phone.

Press and hold Volume Up on your LG V20 and while doing so connect your smartphone with your computer with the help of the already used USB cable.

The download mode will be now automatically rebooted on your LG branded device.

Run the LGUP program on your computer – the software should automatically recognize your handset; if not, try to reinstall your phone’s drivers on your computer and repeat.

From the LGUP program select the three dots that let you load a new file. So, select the KDZ firmware package for your device’s particular model.

From the LGUP software next choose the Upgrade option.

Click on Start and just way while the downgrade / update operation is automatically completed.
Congrats you now can root it

Here is a tutorial on xda, all the required files, and a video that helped me.
Congrats, now you have a rooted, twrp phone. Now onto flashing oreo with root
2. file needed: TWRP 3.2.3-2 for US996 (can be found here), oreo mk2000 beta(the most up to date) kernel for F800L/s/k, lastest magisk or su zip file, oreo kdz - the latest one 2018-12-13 and SD card. 3. copy all these file to sd card. 4. connect your phone to pc, open patched lg up it should detect your variant, select kdz directory, select PARTITION DL and flash kdz with partition dl mode, uncheck recovery, recoverybak, aboot, abootbak
5. wait for it to finish!

6. boot to recovery by hold volume down + press twice the home button the screen gonna show factory reset, select yes twice then it gonna boot to recovery. 7. you might need to repeat all those step twice but > format data > flash Magisk/SU, reboot recovery then format and flash mk2000 kernel then flash root Magisk/SU again to make it work. 8. clean dalvik cache for safety, and reboot system. 9. your phone gonna booting up, if it pass through all LG logo (may take some time, be patient), you are done, if the LG logo keep showing for too long, then you may try boot recovery and repeat all those step.
Congrats you have now w rooted oreo stock.
If you have the orange screen 'find the phone owner' you should proceed with /u/TheChosen1108 advice from here:

get into TWRP recovery and first Mount/system

go back and Advanced/File explorer/System/Priv-app

select the folder 'findlostphone' or something similar and delete it!
